Lactase tolerance can be found in races but is most prevalent in whites. We're not supposed to be able to process lactose as we lose the enzyme when weening. One of ancestors right around when we caught onto agriculture developed the gene and it blew up across caucasians relatively fast. Asian and african people developed it separately but not as prevalent. Making cheese/yogurt also lowers lactase when its fermented so more people can handle it
