When they say spicy, they MEAN it. Don't try and be a badass, just choose a mild to medium spice level to start out with. Most every sauce is going to be good, choose something that sounds tasty.

Be aware that many are named very simply by their ingredients, i.e. paneer = firm cheese cubes, palak = spinach, pakora = dipped in chickpea batter and then fried.

I dunno how your local Indian place does it, but when mine offers goat it's large chunks with the bones still in. So watch for that.

Mango lassi is the best. Also if you want a dessert at the end both khulfi (sort of frozen fruit and nut sorbet) and kheer (spiced creamy rice pudding) are the foods of the gods.

This is a great suggestion. I love goat vindaloo. But, if you don't like bones in your meat, skip the goat and go for the lamb. Idk about Indian places where you live, but here the goat is always bone-in.

My other two favorite dishes are Baigan Bharta (eggplant), and Vegetable Korma. Kormas are usually mild, but you can always ask for it to be spicy if you like your food with some heat, but those are two of the best veg curries, IMO.

Oh man.... I work at an Indian food truck garlic naan is so fuckin good bro. Garlic naan and God no butter chicken is terrible compared to what's out there. Lamb vindaloo for sure. Mango lassies are literally like yoghurt milk and some mango puree
