i'm a sous chef at a high end/fine dining joint, and i just wanted to tell you that you and the people who do what you do are seriously the literal backbone of any kitchen. without you dudes doing your shitty, underappreciated work, it wouldn't be possible to have a restaurant.

pay your dues, eat shit, and keep your head down.. embrace how shitty the work is and how much you dislike it, but do it anyway. it builds character and it's the only way you'll ever be a respectable line cook/sous/exec chef (if that's what you want).

seriously dude.. i just started washing dishes at 21, worked up to prep, went to another place for fulltime prep, went to another place to work as a fry cook, moved again to a fine dining joint as garde manger before moving onto the hot line, and now i'm here. never went to school, and i usually work circles around people who went to school because of work ethic.

even if they don't always give you a pat on the back, the people above you always notice somebody putting in the extra effort and eating shit that nobody else wants to eat.

Washed dishes myself to pay for college (lol hardly any money ended up going to the college, it was all spent on rent and ways to mitigate the stress of work like cigs and beer). Two years of kicking my ass into gear every night. Nothing to show for it besides some burn scars. The kind of work effort demanded does not match the near minimum wage pay.

Left the kitchen, got a job at a cafe for 9.50 an hour, and chilled the fuck out while finally making some savings from quitting all the smokes and booze. Better yet, got my degree in geology and on my way to making 90k for two 3 month contracts telling mines what to do and why you do it.

I had rent to pay and it was 2008 fun fun financial crisis time. Was kicked out of the house as soon as I turned 18. My mother didn't want me around anymore, which was fine since she's a living loaded stress bomb.

Doing dishes quickly and well is a skill all its own. My manager would constantly tell me how important I was how valued etcetc. It was all a trick to keep a quality worker at low pay.

A bachelors in geography is an easy, fun degree to work towards and boy are they in demand across the world for mining operations. Yeah I was a dumb kid with no support desperate for cash, easily exploited.

I pay them good because they do more than wash dishes, they clean pretty much the inside and outside of the restaurant.

Besides our hours are perfect, waste is low and everything is efficient. People fail to realize that will save you a shit ton on money.

The only cities that line cooks can get paid good are Cinci, Colombus, and maybe Akron, based on the demographic you're serving. I operate on the west side of Lima where there are richer people. Fine dining, and usually on a busy Friday or Saturday evening, I'll have between 7-9 on line. But I don't pay them that rate starting out. Those getting paid have been here for at least 3-4 years. Most usually go to bigher and better things across the country.


Most people don't appreciate the hard hork of being in a kitchen, that's why I pay them and also I set high standards that make them bust their ass for their money.

was a dishwasher in a real nice restaurant for the three first months, started out when i was 16, kept looking over my shoulder at what the cooks were doing and tried to help out as much as i could. then i got promoted and right now am working as a cook/cook's helper. also got a raise, so that's nice. it's been around 8 months and the last five of which I've been constantly learning new things and doing my best at the kitchen. planning on going abroad after finishing grade school. was thinking of northern France or Belgium. any ideas on this matter?

Hotel Executive Chef, Restaraunt Chef, Sous Chef, FoH manager, Bar manager, Food & beverage director, Assistant Food & Beverage director.

They had managers running food and bussing tables because there was literally nothing else for them to do.

Endless shrimp is over, and I feel like I just braved a hurricane.

It took me over a month to get the system down so that I could actually not get behind

30 minute waits for every party coming in from 6 to 8, a jam packed resturaunt every weekend, on top of the only other dish guy calling in sick far to often on the weekends was hell.

All of this hand-burning, feet-slipping, disgusting work for minimum wage, yet the servers have the audacity to complain about their tips during the busiest promotion that Red Lobster has.

Also, this is important, dishlickers, since slipping over X gets annoying, and falling could potentially be really bad, check out Shoes for Crews, their boots are probably the most slip resistant work shoes I've ever worn, and it's totally worth it to shell the $40 for a good pair of boots that will last you literally years instead of falling and missing work for who knows how long.

Also, anon said, scratchpads are your best friend.

Having worked as a dishwasher in several places, and a line cook in others it still amazes me that kitchen staff don't just fucking walk off the line and picket their employers. There is seriously no reason for kitchen staff to make less money than fucking bussers and they should get a full 50% of all tips.

Unless you're a serious chef who makes real money I can't understand why anyone would do the shittiest job for the least pay. If line cooks and dishwashers all walked off their shifts then management would have to rethink their "servers/bartenders taking home $200-300 on a busy night while line cooks make $70" strategy for running their business.

I'm not so sure. If we're talking only men for both jobs then maybe, but if we take into account both genders I really don't think there are too many women who would be capable of handling a dish pit on a really busy night and who would even be willing to perform the job, which matters.

It is certainly a passion for those who are dedicated. Most cooks I know either have aspirations for being a chef or owner/operator, or they aren't really dedicated but know that if they show up, don't fuck everything up, and get it done in a timely fashion they won't have many problems, which leaves a lot of room for their idea of a fun life style. That doesn't really apply to dishwashers though. I washed dishes because it was the first job that came my way. I had always enjoyed cooking, and when I got to prep in the kitchen it took off from there.

Oh and as for ugly people I sort of think that's not really true. I've worked with lots of sub average to downright ugly servers (male and female) and it's not like they got less tips or anything. Maybe sometimes the hotter girls get a slightly higher tip out, but I've never really observed it in practice, probably depends on the restaurant.

And keep in mind that if the food is even slightly complicated the amount of people who can cover an experienced chef over a server is incredibly slanted. Basically anyone can talk to customers, walk food to a table and operate a POS machine, training someone to do this from a total beginner to an expert will take maybe a week; not so for cooking and plating a complicated menu; assuming you're training someone to cook from scratch this could literally take months to years.

To put this into perspective I had a server come into the kitchen and ask me how I was making a sauce. When I told her that at a certain point I raised the temp to allow the sauce to thicken she asked me two questions:

1. Why would heat thicken a sauce?
2. How will you know when it's thick?

Most people literally know nothing about cooking. If you were training someone from scratch you would be teaching them basic ass shit like salting pasta water and why certain reactions result in certain properties in your dish as well as your actual menu.

I'm going to school right now to expand on what I already know. Working dish sucked real bad. But it does build a lot of character. When staff were nice to me I was more willing to go the extra mile for them to help them out. I would always make sure they had what they needed.

I was a dishwasher for like 8 months before I was promoted, but I get the feeling I could have moved up sooner if I had just asked sooner.

Cooking is a lot more different from dish then I thought, but I still believe the skills that dish gave me made me a better cook. Also, I am the only one who gives a shit about making sure stuff doesn't stick because I was a dishwasher.

I don't see how that makes it easier to wage theft than any other situation. Also it should be tips averaged over pay period, whether weekly biweekly or monthly.

I think though wage theft in restaurants is more likely due to not accounting all hours or not paying overtime. Too many servers working 50 hour weeks and only getting marked down for 30. And they are supposed to get 5.75 pay, with 10.88 minimum after tip.

Employer must get employee to sign tip sheet for every pay period. Then tips earned must be printed on pay stub for pay period. Other item that are included on pay stub are hours worked, and wages earned.

This is what I mean by documented. If the employer does not pay what is owed to the employee it is shown on the paystub. If employer changes pay stub to avoid paying extra, then it won't match the tip sheet. If employer changes the tip sheet, it won't have signature.

Documentation. Trails of documentation. Sure the wages can be stolen, but not without effort, and the amount of effort is no different from any other employer stealing from their employees.

A lot of those, for sure, but I would guess that the average age of the actual dishwashers posting in this thread are maybe 20?

At 20, it's definitley not where you should be unless you really want to move up the ranks onto the line or become a chef or owner. If you want to. Not saying that's the best, but most 20 something dishwashers are in the right place to do so.

Now if someone was 30 and was still washing dishes, that would be different.

Fuck Shoes for Crews. The first pair of shoes I got from them were fine, but I was working fast food then and not doing dishes, so I tried to order a more water resistant pair this time. The first model I tried was uncomfortable as fuck, so I tried to exchange them. I had to call them twice after I already shipped the shoes back to them because I kept getting emails saying there was problems with my order. Then I finally got the new pair yesterday, and they sent me the wrong size. I'm just going to get my money back this time because I'm sick of this shit. Meanwhile, my current shoes are falling apart because I've been dealing with these shitheads for a month. Now I have to go to Walmart and get a shit 20$ pair to tie me over until I get my money back and can afford a good pair of shoes.

Best non-slip shoe I've ever had, but the shoes themselves are utter bullshit. They fall apart so quickly and they always hurt my feet, even with arch supports.

I just got a 90 dollar pair of Mozo's and they are comfy and so far they have held up to 50 hour weeks on concrete floors. I'm a bartender/manager so its a barrage of water, booze, citrus,syrups, and broken glass and they haven't slipped, leaked, or cracked yet. Come spring we'll see how they lasted.

A side plus to them is that they don't look like hospital shoes or grandpa sneakers.

It just turns my skin red and makes it super itchy and irritated.

Used a lot of ointments and moisturizer and soaked my hands in peroxide when I got home. I'd wear gloves they never worked.

Now I'm a waiter and avoid sanitizer as much as I can. I wipe off tables with rags soaked in steaming hot water instead.
