Not him, but my basic sofrito for the beginning is garlic and onion which I cook in lard or chicken grease, with beer added from time to time to aid caramelisation, then I add cumin and a mix of green chilli powders. I use green chilli powder because it's both stronger than red and adds little colour. I have to make them myself because I can't find green chilli powders of any sort where I live.
Thereafter, it varies depending on whether I'm using bonestock and/or raw meat.
-If bonestock and raw meat, I add the meat, par-cook it, then add the bonestock and let it reduce.
-If using bonestock and cooked meat, I add the bonestock, let it reduce, then add the meat.
-If not using bonestock, I add dry beans, either chickpeas or white beans, and water and pressure cook it, then, if using raw meat, I cook the meat separately and add it after. If using cooked meat, it's also added after the beans are cooked.
Finally, I serve it up with bowls of fresh cilantro and blanched-and-shocked slices of chillies (usually jalapeño, but sometimes also cayenne), both red and green, on the table. I blanch the chillies to preserve their colour.
I only add beans if I'm not using bonestock because they'll yield a similar, full texture for the finished dish.
