hey ck i have a ton of collard greens and kale. what can i do with it?

I suppose you could, I don't see why not.
only thing I'm not sure about is weather or not you should boil/steam the leaves before putting the meat mixture inside and baking them. You may not have to because they are more thin than cabbage.

you could also go the other way and use kale as a filling for a veal, beef or poultry roulade

just chop up the kale, wilt it in a pan in olive oil on medium with some aromatics, ie garlic, onions, some spices you like and maybe some bacon
pound your meat flat, add kale, roll it up and tie it together with a string or use toothpicks if you don't have any
