1/2 cup chicken stock
1 cup milk
1/2 tsp black pepper
1/2 tsp chipotle powder
2 tsp Garlic powder
2 tsp Mustard Powder
1 tsp Worcestershire Sauce
8 ounces Velveeta
3 cups shredded cheddar
1 cup shredded swiss
Slowly heat liquids, add seasonings and stir in the cheese
Eat with french bread

I mean, he already had chicken stock and chipotle powder in there, it's obviously not a traditional fondue. The velveeta will make sure the sauce is silky smooth, since it's mostly fat and emulsifiers.
A little velveeta or american cheese is a pretty solid secret ingredient to make most hot cheese-based things not break.

you can boil the alcohol out of wine to make it non alcoholic. or you can leave it out for a few days and reduce it to make it white wine vinegar. Alcohol left out becomes acetic acid which should be ok from a LDS perspective
