Because it is a patented, marketed and licensed preparation method. You literally have to pay for the equipment, pay licensing fees to sell the food, and get certified to cook it.

There are a lot of other companies that pressure fry their chicken in a slightly different manner with slightly different equipment so it isnt a violation of trademark or patent, but it isn't technically "Broasting" either. But it is cheaper because you don't have to fucking license your chicken.

OP, can confirm. Stopped in Hillsboro for some business and then needed to kill 4 hours in Forest Grove because reasons so I decided to broast it up before I drove home.

It was a good decision.

Ehh apparently it's easier to just open a non-franchise like our main man Scottie and then license the broast chicken process. Unlike a normal franchiser system broasting doesn't incur ongoing royalty costs.
