He admits freely that he's a shit cook who had a lot of experience in the industry and it helped him land a job as a head chef with a desperate restaurateur. Most of his career was spent working as a line cook and smoking crack. He only did the chef thing for a few years, and then wrote a book and was able to GTFO. You can read all about it in the aforementioned book which is titled Kitchen Confidential (and is actually really good).
He can be a dumb liberal at times, but he's entertaining and makes some damn quality television.

Andrew Zimmern is far more entertaining
Bourdain is cool but I've only ever liked him for his stories, his actual thoughts on life are pretty obvious and simple to anyone, nothing really new and his visits with most people seem fairly shallow, as if everyone is putting on an act to seem down to earth yet refined
