Ok, so I'm just asking if you guys think my plan is feasible.
There's a large festival in my area for summer that spans a weekend, prominently featuring asian street food.
I want to sell pic related (japanese cheesecake) , but mine is less jiggly and would be ~4in diameter.
I would need ~3000 of them for the weekend, and theres no way I can make that many

TLDR: I wanna contract bakeries to make pic related for me. These are souffles in essence, so pretty hard for bakeries to do.
I plan on 1000 a day, picking them up as they are made.
I would be splitting it up between several (eg 5 bakeries, 200 each)
What would you say unit cost would be for these if I actually got bakeries to say yes?
Would anyone even take me up on this?

It's probably not feasible. Why would they do this for you when they could just take what they made and make the profits at the festival themselves? Besides, if you come in with a bunch of premade stuff, it's less likely to sell--part of the reason people buy things from carts and food trucks is because they get to watch their food get made fresh.

Get a taiyaki maker and sell taiyaki. Weeaboos go apeshit for it (face it: they'll be your biggest source of income), they're quick to make, and the profit margins are huge. Offer red bean (for the ultra weebs) and chocolate (for the casuals). Don't sell singles.

Why not just deal with one bakery and settle for however many they're able to crank out for you? You're idea of contracting 5 different bakeries over the course of multiple days sounds like a disaster waiting to happen.

Those souffle cheesecakes are actually very easy to make and don't collapse easily in my experience. Of course, I haven't made them in those quantities but they're definitely not as fragile as they look.

How large a stand would you have anyway to sell 1000?

I think it's unlikely that a bakery would make these though, unless it's already a product they have sold or sell. And if they sold the product, I don't see why they would sell them to you for you to sell them on again.

I think places would sell to me for the same reason there are wholesale sellers. I'm offering immediate profit with no risk of not selling the product. Maybe they'd make me advertise on my banner, maybe I'd have to pay them a service fee on top of the units sold.

Here are some questions you need to know the answers to:
How many will you be able to sell?
What are the ingredients per each or batch?
Where will you source the ingredients and how much will they cost? Will the bakeries supply the ingredients themselves?
What kind of a FC% do you want on them?
How will you serve them? Boxes?
How will you transport them?
How will you keep them cold?
Do you need your own stand? Hand washing sink? Cash register? If you're selling 2 per minute you are going to need 2 registers or more.
Will you take credit/debit cards?
What are the requirements for the health department? Do you have a food handler's permit?

well, the 40k was from 2012, last year was 60k people attending. The lines don't stop, the only places with short lines are trash tier/boring foods, and my food doesn't seem boring at least.
1. in the process of getting metrics from veterans to the festival, but even a cake/minute actually is extremely slow for this event, even for the worst of the bunch. (10 hours)

less than 100 vendors with 60k foot traffic last year, and it's growing every year

Why don't you rent a commercial kitchen like a normal person? From what I see, cook time is about 1hour give or take. 5 sheets trays holding 48 souffles each gives you 240 per 90 minutes. When the first batch goes in you can prep the second. this is about 7-8 hours in a prep kitchen. We're looking at let's say 30/hour for the kitchen , if your lucky maybe you can negotiate 3 days for 500-700 unlimited access. That sets your costs on one side.

Depending on your recipe, I'd throw your food cost at (5 rotations for 1200 cakes, minus testers and losses, lets call it 1100), about 1200 a day. Without your recipe can't really be more accurate, but I feel you can easily do this for maximum 1$ per portion. This leaves you with plates, and condiments, we'll take on another 400 because I don't feel like looking harder and berries are cheap in Cali.

So quick ballpark we're talking in the neighbourhood of 5k? 4$ a cake, you need to sell 1250 to break even, your generous estimates suggest you can do that in a day. Is it feasible? Sure why not, I'd give it a shot, but I'm also a professional who's done things like this before.A bakery wouldn't do this unless they're desperate for cash. 4in is very specific, stick to the muffin tin idea and charge 4-6$, you can gouge a bit at festivals, people expect it. I believe in you OP
