European cheese contests can be inherently biased against foreign cheeses simply because they only accept DOC cheesemakers and give awards by class of cheese. You can make Red Leicester in America but it wouldn't be admissible or as good as what you can produce in England because of the terroir, but you can make new and different kinds of cheeses in America that are on par with euro cheese, just different. Most cheese contests in Europe are based on class, like best Cheddar or best Edam or whatnot. Well in that case you can only really have cheese from producers in the cheddar or edam region, so American cheddars or edam would not be admissible as they are not actually from those places, just "cheddar style" or "edam style." It's not a terrible system but it is not possible for American cheeses to win in those contests

The problem with the Wisconsin cheese board's contest is something like 2/3 of the judges are from America, so they have an inherent bias for American cheeses you would assume, but I think they are probably well trained enough about the cheeses of the world that that would not be a huge problem

Frankly the meme war about wisconsin and european cheese is stupid to me. It's not like Euros are trying to impress americans with their food, they already know it is good

It both is and isn't a PDO. The EU in typical anti-British sentiment said that Cheddar was to widespread for it to get PDO status, Feta was the same but they gave that a PDO, but they agreed that the traditional cheddar which is distinguished by being "farmhouse" can get a PDO.

It's the same way that "Parma ham" is a PDO but "ham" is not.

The reason the PDO is for "West Country Farmhouse Cheddar" is specifically because a PDO application for "Cheddar" was rejected, because it was considered that Cheddar was too generic a word now.

I'll probably start by taking a fifteen min walk to the local supermarket and browsing the deli selections. Stop for a coffee built into the store. Wander back, head to the butcher's nearby for something for dinner and some summersausage and cuts to go along a sampler plate, then I'll take a drive to the farmers market and socialize with a few folks I know and cache their input, probably get a drink, maybe a bite and head back.

It's not like an all-day affair but on a sunny Monday it's all I'm going to go out and do, unlike people camping on message boards posting about Deep Dish Pizza.

Everything in moderation. Cheese is usually not as bad as straight milk, though you want to go for harder stuff or try goat cheese.

Depends on the cheese. As I recall, most hard cheeses are naturally lactose free.

It is basically just salt. It is no better or worse for you than eating cheese with extra salt. If you're intake is already high, then yeah, maybe don't do that.
