i received several pounds of high quality pork belly. This morning, we cooked some straight, cut into rashers and lardons. During the cooking, they turn grey like a pork chop, and smell more 'pork' than bacon, due to the lack of smoke i assume. Eating was delightful, crispy, fat was clean and smooth. very melt in your mouth. Its like a pork chop and a bacon slice made sweet sweet love.

Depends on the cut, what degree of doneness you want, temperature of the pan, and the thickness.
Just touch it, the more done it is the harder it feels.

What are some good fundamentals for becoming a great baker? My goal is to be able to bake sandwich loaves with great variety without having to read a recipe.
Are there some simple ratios I can memorize, like the parts of water per parts of flour?
Depends on what kind of bread you're making. Many recipes will have baker's percentages to make it easy to scale them up or down. There are other things you need to learn like how to mix the dough, how to let it rise and not overwork the dough.

Find a good supplier for flour and eggs, buy an high quality oven that maintains heat, and practice recipes a lot with minor variations each time.
Having friends as taste testers is a plus as well. No one turns down sweets till you fuck it up.

Gentle movement forward, abrupt but not a hard snap at the edge to flip.
Also make sure there's plenty of grease in the pan.

I would buy a waffle maker if I didn't just use them as a delivery system for butter and syrup.
I tried making waffles with my mom's iron yesterday, as a matter of fact. They came out pretty good, but cleanup is too much of a PITA (no removable plates). No wonder she never uses it. Anyway, I won't be doing that again any time soon.
