I recently ended up with a shit load of scallions. What can I do with them?
Getting ready to throw a 6 pound pork butt in the smoker. It's been rubbed and allowed to rest over night in the fridge, and before it goes in the smoker, it's going to get injected with apple juice and a tbs of the rub mixed.
Estimated cook time is 1.5 hour per pound X 6 = 9 hours at 240-250 deg F.
Will be spritzed with apple juice and apple cider vinegar once an hour after she hits 100 deg F.
Once she hits 165 deg F, she's getting double foiled, and I'll finish it in the oven.

Goal is 150 - 175 deg.
Threw some maters', habs, jalapeno's, and sorrano peppers in that bitch to have chipotle peppers, and to make a hickory smoked salsa.

What's your guys' thoughts on steak sauce? I love it even on steak and even though some people view that as a crime against the culinary gods. I also like to use it to flavor burgers while I cook them on the stove.

I'm Indian so I've tried several Indian dishes and dhal seems to work all right, but cooking rice every day is a hassle. Idea in next post.
I've also tried some other stuff like chili, which turns out all right, and any number of stews, which all turned out terrible.
I also considered making wraps (lavash, hummus, sriracha, a ton of vegetables), but the daily fresh vegetable cutting takes a long time here.
One thing I haven't tried is stir fry or vegetables from a bag at the supermarket yet. I'm going to do that today.
Any general suggestions guys?
Idea for speeding up rice cooking:
on Sunday, leave water and rice in pot. It doesn't hurt to soak the rice, right?
Buy a small Servo and attach it to the rice cooker's lever, back it up with my server, write up a quick web front-end, that allows me to switch it up or down remotely. Turn it on before getting home.
After I'm done, clean it and replace with rice and water again if I want to eat the next day.
Are there any problems with soaking the rice for so long? Is this a viable idea?

This week's cook-along is Whole yellow pea soup (a take of pea soup, I've made a split pea soup version in a previous thread)
1 soup bone
4 liters water (16 cups)
600g whole dried yellow peas
300g split dried yellow peas
3 celery branches
1 small turnip (or 4 baby turnip)
1/4 of a nutmeg, grated
1 table spoon summer savory leaves
6 bay leaves
1/4 cup chopped parsley
2 tablespoon salted herbs
black pepper to taste
1.Put the whole peas in a large bowl that can be sealed.
2. Fill with water and put in the fridge overnight to soak.
Have any of you had some of this stuff?
It's hot. Also not cheap. Still, whenever I'm at my parents' where it's available I have to swing by the local sauce dealer and pick some up.
Protip: do not use when eating without pants for fear of inadvertently rubbing your junk afterward.

Beef fillet with a side of baked potato and Cesar salad.
I put a mixture of olive oil, onion powder, and garlic seasoning on the potatoes. Didn't really taste different, but my guests were impressed by the look. The salad mix wasn't from a kit, but was pretty off-the-shelf in terms of what I used.
