/ck/, how do I curry? I've found some curry powder in my pantry and I've always wanted to try it. I realize really powder probably isn't the best way to go, but I figure I'll start simple and go bigger later. I was thinking I'd cook it up with some chicken and vegetables, maybe some combination of broccoli, cauliflower and/or carrots. My main concern is how to make a sauce out of the powder, the instructions just say "Add 1tsp per cup of cream sauce" and I have no fucking clue what it means by cream sauce.

Depends on what curry powder you've got but eh here's my advice on a simple curry.
Choose a base such as coconut milk, chopped tomatoes, yoghurt, cream or stock your choice.
Cook your meat or veg in a bit of garlic (ginger as well if you like it) in a frying pan or wok. When mostly cooked chuck your powder on it and continue to fry for a bit.
Add your base to the meat or veg (this is why I prefer a wok) and then let it cook for a bit until it reduces to your satisfaction.

My kitchen is pretty much perfect, I'd only really want to change the counter-tops to something on which sticky, light coloured mess like dough is more visible, maybe dark granite, stainless steel or something similar (currently laminate) - cleaning them properly afterwards is a bitch.

Mines alright I suppose. Nothing fancy, induction stove and not really a top end model, but gets the job done (was here when I bought the place), same as the fridge and dishwasher.
Only real complaints are:
- lack of usable counter space.. I plan on putting an island in the middle though when I can afford it, should fix that.
- Lack of decent sized cupboard space (most of the cupboard are narrow), again plan on fixing that (adding some storage to the far wall on the right plus the island) once I've got the funds for it.
- Woodwork is all cheap laminate crap...

Anyone got a legit recipe to make Chipotle-tier rice?
I've gotten pretty close by adding vegetable oil and lime juice mixed with cilantro to white rice, but I wonder if anyone here has found the perfect mixture yet?
Anyone find it disconcerting to read "Chipotle-tier" in a sentence that makes it out to be a good thing?
When I make cilantro lime rice, I usually heat up some oil in the pot, throw in a clove of minced garlic and let it cook for a a minute or so, dump in the rice and stir it around to let it brown a little bit, then dump in chicken stock and the zest of a lime, bring to a boil and then simmer it until done. Then I mix in some salt, pepper, the juice of the lime and some chopped cilantro right before serving.
No idea how it compares to Chipotle, but it's pretty tasty.
