Made a tiny rye with sesame. Didn't rise up much because it was too wet. Great bubbling though. Excellent flavor. My culture is really taking off after the switch to rye/wheat mix.

not, op, but I finish off a loaf of my home made sourdough bread every other day. It is great for you, provided you include some whole heat flour, and do not eat it with butter, jam, or anything fattening or full of sugar. I eat it with beans. Wheat is better than rice.

Depends on the size of the breast, the temperature of the room you're defrosting it in, whether you're defrosting in water or defrosting in the microwave, etc.

Hey /ck/, so I've been looking for a new job and I got an interview at this new burger joint that's opening up in my city. There's actually a few around here, but I've never been to one. It's a "trendy" place I guess, definitely looks good. I have an interview for a position as a chef on Monday, and I'm wondering, just how hard is it to be a cook at your average burger joint? It's not hard, I haven't worked in a burger joint, but you're making burgers. Chances are they will train you with their recipes and whatever else. Even then, you will probably in charge of cooking the meat or whatever or assembling it all together.
Anybody else cook with MSG? I started using it last year and it really does seem to improve my recipies while also lowering my sodium intake.
Also are any of you familiar with other nonspice additives that can produce a similar improvement in flavor?

I bought pure MSG crystals to experiment with
the first thing that I found was that they amplify regular salt; it is about a third as salty as pure salt to begin with, but when paired with regular salt I think it's more than that
so when using it it's important to significantly reduce salt
the next thing I realised was that f you put too much into food it very quickly makes things taste funny and unpleasant
you really only have to add a teaspoon for a pound of meat, however vegetables can take twice that
I only add it to dumplings, soups without pork and heavy sauces regularly
still persevering with my experiments
