been there for almost 2 yrs. I love my coworkers and my chefs and the food is amazing. I've learned a lot and grew a lot there. I started off as an 18 year old crybaby who could barely cut through carrots with their dull ass culinary school knife, and over a year and a half later I've mastered all the stations and currently I'm learning some sous responsibilities like ordering and expediting.
Long story short, these guys took me in when i knew literally nothing and they molded me into something impressive....

You just have to work hard. Be ready to fail and learn everything you can. This will test you and you will find out if you really want to do this. If you suck get better, work for a year or two, take everything you learned and move on. Only way to be a better chef is to keep moving to gain more experience.

drink water before and while getting drunk, dehydration is what causes hangovers. theres no immediately undoing it once it's done, youll just have to drink water and wait it out.
make sure you have enough that the alcohol to water ratio end up being 4/96 (the equivalent of having drinks that are 4% alcohol)
This doesn't work for me. I get hungover if I just drink beer. I always have a glass of water with every drink to prevent it. Also gives me more shit to do at the club between drinks.

Post knives. I want to buy a set of decent ones, post your favs and what not, money not an issue.
Currently the only knife I own is pic related. Wüsthof chef knife, 20cm blade, composition X50CrMoV15. Satisfied with it but a few different ones would come in handy.
Wusthof has a good warranty. Good steel. I had a Classic Chef knife with a cracked handle that was 8 years old they replaced it. In hindsight I wouldn't get any grip with a riveted handle as it is s failure point.
I was preparing panir the other day and took some pictures.
It's pretty easy all you need is milk and some yoghurt and some icecubes.
Cook the milk, take from the heat and add some yoghurt. Stirr until the milk curls.
When it Starts curling add some icecubes to cool it down a little and to speed the process. After that empty your pot into a towel, let it hang for a couple of minutes and then press it.
After about an hour of pressing.
I realize my kitchen looked like shit that day.
