Just got a bottle of pic related, really nice stuff. Quite thick and syrupy as its distilled with honey. Each bottle is hand numbered and has the postcode of where the bees that made the honey live.

I occasionally drink Vietnamese style coffee simply because I took a vacation there, have a lot of good memories, and bought one of those drip makers they use.
That aside, the only reason they add sweetened condensed milk in the first place is because Vietnamese coffee is almost across the board shit.

I've never had a "low country boil", but I've had (and made) Louisiana-style boiled crawfish many times. It seems like it's nearly the same thing. From what I can tell the only real differences are that the Cajun version tends to be spicier, and contains a larger proportion of crawfish to other seafood. We do throw in shrimp and crabs but usually in a smaller proportion. We also add Andoullie sausage.

So I've lived off fast food for literally years and am fixing that.
I fear my heart may have seen some damage so I want to eat heart healthy for awhile.

I know red meat, anything fried, butter, and shit like Mayo.
Biscuits are less healthy than Wonder bread.
Red meat, butter, and mayo are all fine in moderation. If you're trying to kick a fast food addiction it's probably best to lay off fried foods for awhile.
Best thing to do is avoid refined sugars, especially HFCS, and try to eat more fresh vegetables whenever you can. It's less about health than it is rewiring your brain to make you want to eat healthy foods.

For dinner tonight is one of my all time favorite ways to make chicken, with a clay top or also called schlemmertopf. Produces a very tasty and juicy roast chicken with cheap and simple ingredients. If you don't have one, you could try doing the same in a duth oven I guess.
Let's get started.
First thing you want to do is let your clay pot soak in the sink while you prep. The pot is gonna soak up water and steam that chicken before it dries out and you get some roasting.
Chunk up your onions into quarters or six pieces like I did here since mine were quite large. Set aside.
