I'm not an American, so I can only compare New York to Chicago deep dish. New York was much better - the deep-dish was so heavy, over-topped, and the cheese was usually too cold.

I use the butcher knife a lot. The trick with the newer ones is to grind back the factory edge a little to get to the better quality steel. It sounds weird but the factory edge isn't great. Over time you'll find the blade gets a better and better edge the more you sharpen.

I used a modified version of Ken Forkish's Overnight Country Blonde. I modified it in regards to my kitchen temp of 77-78 F. So basically bulk ferment for 4 hours at room temp, then put into fridge for another 10-12 hours (watch it). Then just simply let it finish fermenting for another 2-3 hours at room temp.
The proofing stage is basically proofing/shape stage is proofing for 1-2 hours in its baskets on the counter and then placing in the fridge for another 1 or so. After wards let it rest at room temp while waiting for your oven...

To make things worse, Monsanto has sued farmers and have won in court! Monsanto has patented (copyrighted) GMO seeds, making them illegal to use/ sell unless paid for. Many crops, such as corn, are wind pollinated and can easily contaminate a neighbouring farmer’s organic crop (via wind).
When their crop tests positive for GMO and they don’t pay Monsanto- they sue the farmers and succeed in doing so! See how they can scare farmers?!
