Dark meat, spicy. Red beans and rice are god tier, and the fries are the most underrated fries in fast food. But all the sides are great. Wash it down w a strawberry fanta like the native locals do.
What is your signature dish, /ck/? What do you like to cook when you have to make food for other people, or what dish receives praises from your peers?
I cook a pretty mean mac'n'cheese. I usually use an extra sharp cheddar, with a swiss cheese like Jarlsberg (sometimes the smoked kind) for the sauce. I also put some mozzarella for the stretchiness.
I'll usually add some bacon and brocoli, too (pic related, not mine but looks a lot like it)

How is this difficult to understand?
As a European I've noticed a few major differences when it comes to European baking versus American baking.
First off, in America it's apparently difficult to even find a place to buy fresh yeast. This is a baking staple in Europe. And buying "cake mixes" and such isn't a thing here. If you're baking, it's made from scratch always.
Also, we don't have "self-rising flour", we just mix in baking powder. Vanilla essence is rare, instead vanilla sugar is used. "Cooking spray" is not a thing, also we don't...

If you include breads, the biggest topic becomes sourdough. I feel like Europe is the only region were sourdough is still made. The rest of the world seems to use industrial yeast, bicarbonate, and lab made enzymes to leaven breads. Here even many breads made like that are made to taste like sourdough.

I have wheat, whole wheat, whole rye, corn meal, and tapioca on my shelves. Neither has added leaven or any ingredients to list. My cheapass market also carries spelt and barley.
You can get mixes, but those are marketed as specific lazy-housewive products. There's cupcake mixes, chocolate chip cookie mixes, lemon or chocolate cake, etc.

There are some things I think everyone can be excused from making themselves even if they normally make all their own food.
Just stick a bunch of bones and vegetables in a crockpot. No effort needed.

if you're in the house for a few hours it's not exactly the most hands on thing is it. roast bones and other stuff, deglaze into stock pot, bring to simmer, leave on lowest heat possible, go watch tv, strain into tall vessel and put in fridge for defatting and filtering the next day.
if you *don't* have that much time you can drastically lower the simmering time in a pressure cooker or you can use a crockpot.
after a few goes you will find a workflow that can probably fit into your schedule assuming your working hours aren't that bad. but it...
