I want to sell pic related (japanese cheesecake) , but mine is less jiggly and would be ~4in diameter.
I would need ~3000 of them for the weekend, and theres no way I can make that many
TLDR: I wanna contract bakeries to make pic related for me. These are souffles in essence, so pretty hard for bakeries to do.

It's probably not feasible. Why would they do this for you when they could just take what they made and make the profits at the festival themselves? Besides, if you come in with a bunch of premade stuff, it's less likely to sell--part of the reason people buy things from carts and food trucks is because they get to watch their food get made fresh.

Me and a buddy want to do an organic pizza eatery, where we grow our own veggies (tomatoes and toppings), and source out the cheese from a local farmer. I drew up some numbers, and if we sold ~ 50 pizzas a day, we'd break 100k income for the business. I'm an environmental engineer, he's a chemical engineer, and we're both pretty passionate about sustainable eating, so we figure this is a good way to introduce this sort of eating to people who don't even think about it.
