This week's cook-along is cheap, tasty, filling and re-heats well. However it doesn't plate pretty, I'm already aware.
So for this week we are making Napa Cabbage and Pork Stir-Fry
Ingredients
1 pork tenderloin
2 1/2 tablespoons soy sauce
4 teaspoons cornstarch
1 1/2 tablespoons sugar
2 tablespoons rice vinegar
2 tablespoons water
2 lb Napa cabbage, chopped
2 tablespoons oil
2 cloves of garlic, minced
1 tablespoon finely chopped peeled fresh ginger
Optional : Sambal Oelek (1-2 tea spoon, to taste)

Someone posted a thread here a while back trying to think of a dish that pairs both fish and cheese well.
This has honestly racked my brain for weeks now; I've thought about it in my real daily life ever since.
It really is an odd pairing that should make sense (fish good, cheese great) but doesn't actually work.
Really the only thing I can even possibly think of is feta crumbled on fish soft tacos.
I need more ideas. This seems like an impossible combination and that shouldn't apply to food.

You just need a fish that's not very fishy and a cheese that's not very cheesy, and then assemble them in a way that doesn't emphasize either.
Take some cod, do a coarse breading with some panko, parm and italian herbs and cook it. Done. And it'd be fairly tasty.

I believe food absolutely reflects a nation or culture and its willingness to adopt and combine.
I am not proud of my country's infatuation with sugar. Jesus Christ, I never realized how much sugar or corn syrup is in foods that should never have sugar in the recipe to begin with. This realization came about when my teeth became sensitive and my palette shifted to liking spice and non sweets.
For one, baked beans differ here than in the UK. The difference is the loads of sugar we put into pinto beans. fucking gross.

I'm looking to cook some chicken adobo tonight and was wondering - how do you cook chicken in a pot, keeping it tender, while letting the temperature run high to reduce the sauce? Turning up the heat usually makes chicken get hard.

I am on an apple pie binge, and would like to know your prime pie recipes.
Crab apple pie was a sour kick to the mouth that was kind of rad.
ORange zest made it taste like orange pie with vague amounts of cinnamon.
What other additives exists outside of cinnamon, nutmeg, and sugar?
Are there additives to make my dough more amazing?
How can I incorporate honey into either the dough or pie? Would this be madness?
What is the purpose of weave pie top crusts?

my mom makes a MEAN apple and raisin pie.
everyone goes crazy for it.
put your bottom crust in the pan, bake it 5 mins or so, add the apples and raisins, and top with sugar, cinnamon, and nutmeg, and dot with butter.
add top crust and puncture so you don't get fluffage.
it's pree good.
apple/pear can be a good combo too but use much more cinnamon.
Ginger and cardamom are also really good with apples. You could certainly sweeten your filling with honey if you wanted to. Weave pie crusts are just for decoration.
As for pie crust; I knew a woman who baked pies for a living and everyone raved about her crust. After much nagging she told me the only thing she does that could be considered a secret is add vinegar to it. Not enough that you would taste it, apparently it works as a tenderizer. The rest of it is just proper technique.
