There's no way that these are gel polish. Looks like terribly applied acrylic, or possibly normal gel. If it's gel polish, it's a very low quality, congealed gel polish. A gel polish requires only four thin coats.

Is there a trick to laying the foil smoothly, or do you just have to do it with acrylic/build gel? I like this look but I only use regular polishes and shellacs and every time I've tried, some stray corner sticks up.

I know it's an unpopular opinion, but I think most shapes that aren't oval or almond look terrible. Especially square nails. Hate that shit. I'm a firm believer that the shape of your nail should correspond with the shape of your cuticle.
I love coffin/ballerina shaped nails, however, so who knows.

I think blade, edge, and russian round look interesting but I think they would annoy me to actually have on my hand.
I work with my hands, and had to cut my nails all the way back because they were getting so thin and flaky. Should I invest in tips, or just baby my 1mm free edge for now?

It's gel. Japanese gel polish can be built up a lot since it requires a special base and top coat. There's a lot of different kinds and some are specifically for making thick layers to strengthen the nail.
