I think it's because the cosplays (the gems at least) are more difficult than other western shows because most western shows are just normie/buyable clothing or any shows that do have armor, paint, interesting wigs are from the early 90s and aren't that relevant anymore. also they have interesting weapons that can make for good props, meanwhile most western shows today just offer things like small wands or books, ect. I mean I myself picked opal even though i don't like pearl or amethyst just because I wanted to try the double arms (this was before sardonyx came out). The colors also stick out A LOT. It's hard to walk past a pearl or a group of SU without having the bright colors draw your attention, so that could be it as well.

SU (and Star vs, but Star is suffering feom Disney hating animated shows and also haven't been airing for as long) is very anime in comparsion to a lot of the other shows, I think. Which is why it's gained such a following to begin with and also in the cosplay community.
Also it seems that shows become more prone to being cosplay popular if they've a distinct and uniform look to their designs (Naruto, Sailor Moon, Homestuck and Attack on Titan all have this, aside from SU) so that may be a thing.

As for wands, I think this is the only good one I've seen so far. I think the best way to do it would be by using some solid base (wood, maybe) and then doing the front with resin techniques and using some sort of thermoplastic for the wings and crown.
