I know all my friends with females say that they like to piss on soft things left on the floor. The male cats I've had only ever pissed outside the tray when they had a medical problem or had just moved houses. Other than that, I've never noticed a difference between males and females.

Get them young from a cat group in your city that specifically fosters kittens to keep them in human contact at all time. Get a pair when they are youngest to adopt and get them fixed as soon as medically allowed.
