I was walking the beach last night and I saw this in the sand, what is it? I saw crabs eating them

Sand crabs are what we used to call them. They are some sort of shrimplike crustacean I think. Not a sand flea, that is something entirely different

It's a mole crab, also called sand fleas in Florida, though I think that's due to pompano fisherman not wanting their favorite bait collected and fried.
