If so, what plant is it and can I grow it in Oklahoma?
So apparently it's a Taro plant.

I don't know what species the plants in your photos are but there are plenty of people in colder climates that grow similar plants outdoors during the summer and bring them indoors during the fall.
Colocasia gigantea and Alocasia macrorrhiza come to mind.

I've seen elephant ears in gardens in North Georgia, so I have to assume they can survive a deep freeze.
It's a giant taro, different than the taro you get from stores. Very sub-par vegetable, mostly find them in atolls. I used them as umbrellas while hitchhiking around Maui. Not really suited for Oklahoma, but like try I guess so long as you over winter.

taro in general has a lot of silicates, I believe there is a process to eat them, I think you basically have to remove the upper layer of the leaf, and the lower layer and possibly the veins of the leaf, you might also need to cook it.
In the jungles of the world some people eat that shit.
