After that yeah, I think we will. The CO2 is rising again and birds have the best well equipped respiratory systems to deal with it. Since raptors exist everywhere on the planet, eagles, owls, vultures, etc, the odds are really high.
Long after the human races have ended. A new species will rise. This species will mutate and inbreed until it is changed beyond recognition. The resulting animal will have the beak of a bird, the head of a pig, and the body of a large reptilian monkey/human.

We kill all the mankillers and large animals because they can kill us and have a tendency to eat our livestock, or if large herbivores, eat our crops and smash up fences etc (like elephants). Large animals still hold value as trophies (mans dominance over nature). Things that are good to eat that are not farmed are being eaten to extinction, especially anything in the sea.
We breed our pets to look ever more "cute" and be ever more tame.
Animals like rats, who can cope and coexist in human territory will also fare well. Of course they are small, smart enough to eat our trash rather than focus on raiding crops etc, and are cute looking.
The days of big predator birds, mammals etc are over, unless something happens to kill off most humans.

No, birds evolved in the Jurassic. Any theropods alive post KPg would not evolve into birds.
Tyrannosaurus and other BIG theropods would continue to do what they had done for millions of years. They would get bigger, their arms would get smaller, and they could possibly grow more intelligent.
The biggest and toughest Tyrannosaurus would be the ones who breed. Those ones would be to big to run down prey, and as such would have to scavenge. See pic related for a silly but likely example.

I recall seeing a documentary on the short-faced bear a while ago and it kind of became extinct this way, as it was a specialized carnivore scavenger and very big, meanwhile the grizzly was an omnivore.

Evolution works so that animals that have what they need to survive and breed in an environment thrive, and those that don't die off.
Assuming nothing ate the Rex, and the Rex had plenty to eat, the physically most powerful animals ie the biggest would reproduce. Without a massive change to the environment there would be no need to radically change.

If the habitat called for a different scavenger or hunter, the Rex would adapt or it would die.
There are several things guaranteed to happen in the future, thousands to millions of years ahead; all of them because of humans.
1. Animal populations will recover from the pleistocene and holocene extinctions which left the ecological niches of mega-herbivores and mega-carnivores open.
2. Invasive and introduced species will 'naturalize' to their environments due to having better adaptations than their native inhabitants. This will be especially devastating for isolated biodiverse regions such as Australia and islands such as Madagascar, New Zealand and Hawaii.
3. Animals, plants, fungi, bacteria and all branches of life will adapt to fulfil the ecological niches of anthropogenic biomes. Animals currently filling these niches are rats, cats and pigeons.
4. Introduced species (especially mammals) on remote islands will get larger or smaller in size due to the Island Rule.
5. Speculative; presuming humanity goes on to spread it's influence across much of the solar system, new extremophile forms of life will adapt to Mars, Titan and possibly multicellular life could arise on the icy moons of Jupiter (Europa, Ganymede, Callisto) as well as on Ceres and Enceladus.
Practically all of these are observable already, it's just they will intensify in the future.
