You can say you were busy and forgot to respond. Or you can be honest and say you were nervous and didn't know what to say so you kept delaying it.
Either way, if you're interested in her you should reply right now. Don't make her wait any longer, or she'll think you're not interested (she probably does already). Message her first next time, so she understands your intentions.
