I seen that Nvidia is Releasing their new video card soon. I was thinking about getting it but don't know if my setup could support it (I'm not too good when it comes to this type of stuff) . would I need to upgrade anything else or would I be fine just adding it to my system?

You should be fine swapping out the GTX 770 with the GTX 1080. Is there a reason why you want to upgrade? The GTX 770 is still a pretty capable card for gaming at 1080p resolution.

I've been doing video editing a little video editing and animation in my spare time and occasionally when I'm playing some games I'll notice a heavy spike for a few moments in the game.(also not sure if this affects it but I'm using two 27in 4K monitors.)

If you're running 4K, probably yes. 1080p probably no.

Lol there's actually not a single video card, save for the 980ti, that can run a game at 4k on high settings, and that's on one display. Even if you got a 970 you'd find it difficult to run 2x 1080 monitors.
