I would not consider it. However that's only because I don't currently need money and because it differs from my sexual orientation. If it matches your orientation and/or if you need the money badly then I can't judge you for considering it.
I think that if half the money isn't paid upfront then, AT THE VERY LEAST, you should ask that the other half is counted in front of you and put in an envelope which is visibly put on a table/sofa/dresser. If you don't see it, it doesn't exists. When the activity is over the envelope is handed over without any condition, even if you didn't do X or Y, or if the activity was interrupted, or if the activity didn't satisfy them. It must be visible and must have no condition. That's minimum requirement. It would be much, much better if you didn't have to resort to that and received the full payment in advance, even if it's just after you take off your clothes. If the older man can physically overpower you then I would strongly recommend against this transaction.
