i think the issue with you (and a lot of people) is that you have grown to think of a girlfriend as a thing, almost like an appliance.
people who date regularly dont think of girls that way. they think of each girl they meet as a unique experience, and that is what attracts them to specific girls.
when you just 'want a gf' you are saying you just want some arbitrary imaginary experience. you dont know what a gf entails cuz each relationship is unique.
