I want to move away from gaming as a hobby and get something more productive. Something that I can probably even use to make a little dosh on the side. What options are there for someone who lives in an apartment?

Craft something, craft your body, grow something, cook something. All of it is going to be shit for a long time but if it gets good eventually someone will take notice and want you to teach them how to do it or do it for them.
