>start unleashing my minion meme knowledge on her
>she thinks my stupid meme shit is funny
>next time I go in she remembers me
>jokes around with me some more while we're there
>asks me what my name is and ethnicity n stuff

I feel like we hit it off pretty well but she's probably like 2 years older than me and I'm just a freshman in uni. Would it be weird for me to try and talk to her some more?

Unless you make a move and she has a BF that is...

Try to inject some comedy into asking her out for a drink and see what happens. If she says she has a BF, you say, 'That's okay, you bring your BF... I was thinking of bringing my Mum anyway..

That way the potential weirdness is masked by humor. And she'll probably still like you.
