Why girls seem (or are pictured?) to have such an interesting and funny life, going out, drinking, having a lot of fun and love stories and guys are just... lame? Losers? Why is that? I can't get it

They aren't doing anything more miraculous than what you're doing on their off time. They seem to be having the time of their lives all day every day because they're a lot more camera whore-ish than the average guy.
In reality, while more men will sit around playing video games, watch TV or playing instruments in their down time, women will go on instagram, buzzfeed, netflix, etc.
Don't worry about it.
Girls are a little bit more social, on average. But their conversations are a bit more boring.

Probably because we never shut the fuck up. I just spent the last 2 days in my computer chair playing the Sims and eating Christmas candy - my life is not interesting by any means - but my coworkers and I can burn 45 minutes easily talking about their kids, school, work projects, etc. I personally don't do anything interesting, I just talk a lot and am expressive, so maybe it seems more interesting than it is. Also, a perfectly curated social media presence (FB, IG, etc.) makes our lives seem waaayy more interesting than they are.

I've often wondered, what exactly is the aim here? People often see my life and shake their heads sadly, but I just do what I enjoy and disregard the rest, whereas they usually seem to spend grossly disproportionate amounts of effort attempting to manipulate other people's impressions of them to....what, achieve validation? It always seemed like a waste of time to me.

That sounds pretty normal, OP. Some girls are just into those kinds of things. There are girls who aren't into those kinds of things, but you don't see them because, well, they aren't out there socialising.
