The Falcon was stolen by the slaver which was her owner. As is often stated in the movie, it is best to have two people when flying the ship. One can make the jump that she probably assisted him when flying ,especially with how intimately she knows the ship.
From the flashback, one can infer she has been living on that planet for at least 10 years. Plenty of time for her to become familiar with the mechanical workings of many different ships. She also has her own speeder which means she does have access to more modern and functional vehicles.
It is apparent that during her time as a slave she has been exposed to many different languages and has been told "myths" about the Jedi (Luke in particular) and Han Solo. She knows Leia and Luke from first meetings but does not recognise Han at first view, probably because Han is not Force sensitive like the Skywalkers.
Rey shows she has had to learn to take care of herself and beat the shit out of some fuckers when shit gets real multiple times before she even gets the shakes from fondling Luke's sabre. She obviously doesn't have the strength Finn does and fights with a sabre the same way she does with her staff. She only begins to take the upper hand after pausing and focusing on the Force to push back. Even then, one must remember that Kylo was previously fucking gutted by a pissed as fuck Wookie with a bowcaster and had already fought against Finn who was so cold he thought he was splitting wood for a fire with his swings.

When Kylo and Rey meet, he obviously does not know who she is, which infers she is unlikely to be one of Luke's former padawans. One can infer from the flashback scene that the other members of the Ren standing behind him on the rainy planet are the other defectors which were not murdered in his betrayal. (This, coupled with how young she was in the flashback, also makes it unlikely she was mind-wiped after being trained.)

I'd also argue that Kylo Ren shouldn't be compared to Darth Vader in skill. Especially not skill of lightsabers. Who would have even taught him to use a lightsaber? Yoda doesn't have one, and Ben didn't teach him beyond those aforementioned hours on the Falcon. And even the things Ben was teaching him lightsaber wise were very minimal, if even about lightsabers. Frankly, Lightsabers have nothing to do with the force. The Emperor and Yoda never use them. The Emperor calls them Jedi weapons. Removing lightsabers from the equation, the true skill of a force user is their use of the force. Which considering the training of Luke took at most the travel time of Tattooine to Alderaan and the time it took Han and Co. to get from Hoth to Cloud City(Handful of days at most), and most of that training was mental, we can say the mental side of the force is most important. Usage of the force is about the user's mental space.
Rey is stoic, a bit jumpy sometimes, but generally calm. Kylo is teeming with emotional issues. His ability to use the force is shot the moment someone breaks his ego. Which is exactly what Finn and Rey both did.
Now, from a story construction stand point, is Rey winning her first lightsaber dual ever the best thing? No.
Which is why she lost the first time she encountered Kylo. I'd say beating an emotionally stunted and unstable kid who has to deal with the fact he just murdered his father straight up after tag teaming him makes it fair that she comes out the better. It's like when Triple H uses Degeneration X to win his fights for him. Only heroic.

I will say, however, that she IS able to fight in melee combat, as briefly evidenced earlier in the movie.
She fights with a staff/spear style... Which is exactly how she tries to use the lightsaber. Watch the fight again and you'll see how many time she lunges with a forward stab with the lightsaber as if it were a spear. She doesn't know how else to use it. When she does swing it, it's strong but wild.
Ren is pretty fucked up by that point in the movie, so I feel like that also needs to be taken in to account.
He got legged (might have been in the hip) by a bowcaster, which is a huge hinderance (footwork is everything in any martial art, especially with a sword).
He was also injured somewhat by Finn in their brief saber battle.
Also, as I understand it, both Sith and Jedi require focus to fight and use the force, and his was exceedingly distrupted by rage and, most likely, guilt.
He just killed his dad, and even though he says he's with the dark side, he still "feels the call of the light".
That, combined with injuries, likely had him performing pretty poorly.
ALL THAT BEING SAID, I still find Rey's innate apptitude irksome. The immediate mind-control trick bothered me the most, but again, I'm not a lore-buff so I can't speak to that much.

Whereas with Luke, he was doubtful and skeptical about how he could possibly use it to, say, lift an entire starship out of the swamp.
