Fucking Japan, that's not how education works.

The "only the best shall graduate" attitude is reminiscent of the WWII Imperial Japanese naval pilot training program. Initially it was so rigorous that only about 100 men a year were being graduated, in a program that required 4-5 years.

In 1940, it was proposed that the pilot training program be made shorter, less rigorous, and more productive, in order to build up the pool of available pilots to about 15,000. This was rejected. Japan believed a smaller quantity of elite pilots was necessary to win what they believed would be a short war.

Naturally, once the war actually began, the Imperial Navy started losing pilots much faster than they could be replaced. For example, the 29 pilots lost at Pearl Harbor represented more than a quarter of the annual crop.

This led to a scramble to cut down on training time just to get more pilots into the air as fast as possible. By the end of the war the new Japanese pilots were no match for the American pilots due to lack of training and experience, and the Japanese pilots were reduced to having inexperienced but fanatical pilots crash their planes into USN ships in kamikaze attacks.

It's the same kind of retarded NIPPON SPIRIT nonsense here, the attitude that the best training is one that causes most of TFW cohort to drop out because they are scrubs, instead of one that brings as many as possible up to standard.

Basically this. They justify it by saying the school operates at the highest levels so you need to get on their level or drop out.
It's fucking high school, not even close to the highest levels. It's ridiculous to cut people's careers short at such an early stage.
But this is a nippon manga so it's how it works.

I figure some suspension of disbelief is in order. There are a number of institutions where the low percentage of people who pass is a feature, as only the best succeed: see special forces for the most people, the SAS advertise on the basis that 'you probably won't get in unless you are the best'. Making the food school like this is an amusing twist.

If you're complaining about that, you might as well question how the MC's inability to cook a nice steak following their kitchen being ransacked could in any way constitute a legal mandate to close down their business. Or how some promise by the MC (not even the owner of the establishment) could in any way be considered a legally binding agreement.

Who cares, making things overly dramatic is amusing.

I actually liked the katanah metaphor for Souma's fish dish. Nippon stronk aside, the way the katana had to be folded over a thousand times to compensate for the horrendous quality of the raw iron found in Japan (extracted from iron sand) is a good analogy for how he had to process his fish to compensate for the fish itself being inferior to muhgodnose-kun and Kiba's.

http://busycooks.about.com/od/howtocook/a/potatoscience.htm

Potatoes are all about starch and water; the cooking method controls the reaction between the two.

As a high-starch potato is baked, the starch inside the potato absorbs water from other parts of the potato and swells, making a space between cells, creating a mealy, dry texture.

When a potato is deep fried, pan fried, or roasted, the starch on the surface expands, sealing the edges and the surface, creating a crisp crust and keeping the interior moist.

Boiling, or low starch potatoes, do not absorb as much water, so the cell structure stays intact, and the potato holds its shape.

Yes because the "only those who pay shall graduate" attitude is soooo much better.

>>
>>123578463
>How about having tighter admission requirements
How is that just ? What are you requirements ? High School grades ? That doesn't mean shit depending on where you come from. Contest ? It's a big deal out of one single test to decide your future. On file ? Welcome nepotism, elitism and money ruining everything.
>>

Admission exams. You fail, you try a year later or go for something else, because you had a plan B. Right?
>>
Anyone who's read the manga knows Tootsuki doesn't actually teach its students anything.

What they do is set random insane tests every day that have three possible results:

1. You already know how to beat the test so you do.

2. You have an epiphany halfway through the test and beat it.

3. You don't know how to beat the test so they expel you.

See: Shinomiya's recette where half the ingredients provided were inferior, the challenge to make a buffet breakfast with eggs and surprises, the stagiare placements where all they're told to do is "make a difference".

At no point does the school provide any guidance or teaching, the students are expected to teach themselves.
>>
>>123578605
> ridiculously easy
Well yeah since anyone who finished high school can join

> 10% admission
Yes too, because the biggest selection happens on first year. There's a quota on how many doctors/pharmacists we want each year, that's called Numerous Clausus. It's too be sure the profession doesn't lose quality and to be less stressful after the first year.

But the first year is fucking Battle Royal

>>123578657
Well if you're gonna wait a whole year because you missed ONE exam, why not just giving them a chance to study a whole year in the school and try their hands at the first year exams ? Some people are much better in the long run.
>>
>>123578849
>Well if you're gonna wait a whole year because you missed ONE exam, why not just giving them a chance to study a whole year in the school and try their hands at the first year exams ?
Because they failed the admission and thus aren't worthy of it.
>>
>>123578812
This. It's barely a school, it's more like a giant contest and cooking opportunities to make a name in the profession. And that's not that stupid either for an elite school (students should be a bit older though but it's a manga).

It's just a shame the manga isn't exactly really knowledgeable about food and the cooking world. We also don't see any real cooks in it (even Yakitate no Japan had real personalities in it).
>>

I'm sure there are normal classes, and you don't just do all your learning within the Research clubs.
>>
>>123578909

When you're supposed to teach people, you judge their worth on what you actually teach them, not of what they knew prior of joining.

I think the best system is free admission and extremely harsh final tests each years.
>>
>>123578812
Have we ever even seen a teacher? The top 10 and the post graduates are always the ones giving the tests / challenges.
>>
>>123578425
>to be worth something
The most prestigious university in the world also has one of the highest graduation rates. Having most of your students drop out or fail is not actually a sign of quality; it's a sign that you don't know how to choose suitable students. Only low admission rates are considered a positive.
>>
>>123579029
No. Admission exams and cutthroat finals.
The university I graduated from went from this to free admission and harsh finals, and then to free admission and laughable finals.
Now finding an actually competent graduate is incredibly hard and most companies simply don't employ them at all.

>>
>>123579203
And yet Berkeley, a highly rated school that costs far less money than Harvard and similarly turns away almost all applicants, has about the same graduation rate.
>>
>>123579140
That's because there's competition between universities. An university wants to show high graduation rate to incite students to come (thinking it will be easier), so it will make more money for the university.

That's why public universities (without retarded policies) are, to my opinion, better because they don't give a fucking about their rate, they can be as harsh as they want (and most of the time teachers want to be harsh) and your diploma really means something... if you're in a serious field of course.
>>
>>123579230

That's just logic. No matters how good you are at selecting people, you still can overlook some potential great students. >>123579431
I didn't say that. High graduation rate can sounds good if you're looking at student (if i'm in, i'm good) or school (look, our teachers are so good everyone is graduating) point of view but for employers it's not really what you're looking for.
>>

Many people fail on one single day and are shit forever. You are wasting everyone's time because 1 in a million potential students can prove to be Einstein.

>>
>>123579927

>>123580042
If they really want it they will find a way. There is no need to lower the expectations just because some people have it shittier and have to put more effort into admission.

You don't. You just give more time before selections.
>>

And waste everyone's time which could've been utilised to actually teach those willing. Wonderful, really.
They have time before selections, and it's more than one year.
You see, education past high school is not a right, it's a privilege. You should actually make the admission and show promise before even starting it. If you don't, why even bother?

For what reason? Because they are too poor to go to a public library?
If they can understand the material required for admission and are willing to learn, they won't have any problem. If they can't they have no place there and letting them sit and be stupid for a year won't change it.

Harvard and Berkeley are two very different institutions. Educationwise they are on par but their student bodies are worlds apart. Basically you go to Harvard in order to build a social network. There are 3 kinds of people in HU: The Rich, Geniuses and "Fodder". Old money goes there to associate with other Old Families, while newer ones go there to get accepted to the inner circle. Geniuses go there because the faculty member/program they've been working/wanted to work with is there. Fodder is there because he thinks he is/can be the first two but he isn't. Fodder far outnumbers the others and they are the most of dropouts.Berkeley on the other hand is home to the Geniuses who simply didn't had the money to go anywhere else.

If you check their actual success-academic success that is- both Berkeley and Harvard is nowhere near top 3 as things stand. But thankfully for them there exist criteria like "Field Success Award's gotten since Founding". Other examples from the World that benefit from criteria like this: LSE, Marburg, Istanbul University, Sorbonne. Currently they are a complete shadow of their former selves.

Lastly low grad rates mean the product you are supplying is scarce, hence valuable. Especially when you are culling the weak students. Prestigious schools need this reputation.

>that is not how education works

That is how education works. The more difficult the examination and progress of lectures, the higher value the education has.

You have the right to pursue it obviously, but you have to prove you also have the capability to. Nobody forces you and if you don't have the capability you won't be able to do it. Simple as that.
