Well, yeah, you're right. Just like all the others, the interactions that are reset are lost for all that he interacts with. Except for that final loop. I liked the final loop, in respect to his interaction with Beako. But I liked his other interactions with her too. The ones that she no longer has. That was my meaning.
But as you as, it's the same for Emilia and Ram and Rem.
Let's just forget about arc 2 now though. I like the additional characters coming out in arc 3. It's much more interesting for me.

All the interactions counted in the sense that they helped Subaru learn more about the other characters and his situation in general even if the other characters didn't remember. It wasn't anywhere near endless 8s level of repetition, but the changes were subtle enough that it really helped build a frame for the personalities of the other characters and why they act the way they do, and perhaps more importantly, help Subaru develop as a character.
At the beginning of the second arc, he was still thinking of his predicament like a stereotypical game (Remember when he refers to Beako as an NPC when he first meets her), but at the end, he's a completely different person.
