imma say the definitive sets WOULD have been the "level" blu-rays, but they stopped making those.
the normal blu-ray season sets are 16:9 too, but haven't really checked them out. did they fuck up something hard to be inferior to these?

Well that's simply not true. Look at Dragon Ball Z during the Buu saga. The anime surpasses it in every way.
Though I've yet to read the coloured manga, so maybe that'll improve it. Make the characters feel less hollow.

If you cherrypick the best frames, maybe. Otherwise, not at all. Same applies to the entire series. The anime is simply worse than the manga in every way.
And no, the colored manga is shit what is wrong with you. The manga's drawings were made with black and white in mind, so just slapping color on that looks like shit. It's different in originally colored chapters like >>144171643
