Whatever the case, Rem's devotion isn't particularly unjustified or convenient at all. She seemed to like his personality even when she was wary about him being a Witch Cultist, and she dropped her guard completely when he did some cool and heroic things despite being weak. Well, that and the speech he gave her at the end. Subaru clearly showed he had a lot more going for him than just being a pathetic loser, but she'd still have liked him to some degree for his attitude alone.
