Magic still has rules though, and some people are generally very knowledgeable about it. Just because it's a fantasy medieval setting doesn't mean people just handwave things with magic. Normal people might do that, but subaru is surrounded by exceptional and talented people who are all well educated and knowledgeable about magic.
If Subaru just straight up said that he can see the future or whatnot, nobody will believe him unless he has evidence. Even then, people will be very reluctant to trust him until he manages to produce results.

Also, the very first death was curse related, the next one was because Rem jumped to conclusions due to his smell, and him knowing where shit was when he was never there before. Being near death makes the smell insufferable, and she probably went for the kill there. Ram sliced his throat in the third death as a mercy kill, so he wouldn't get tortured by Rem.
They're not bad people, but Rem lead a sheltered life and jumps to conclusions easily. Roswaal even points out to Ram to keep check on her sister so she doesn't do anything harsh, and considering their backstory, him smelling like the guys who killed everyone and destroyed their village, is probably enough to make her think there's something he's hiding.
