Everyone had their personality toned done after the Soul Society arc, anon. She still shows her personality whenever she has the chance. Even in the middle of the war she is still able to retain her personality.
You also need to keep in mind that Kubo has introduced a lot more characters since the Soul Society arc. Instead of being able to focus on the individual character traits of 5 or 6 characters, Kubo needs to focus on all of his new characters.

Anon, Ulquiorra in Segunda Etapa was stronger than almost all of the enemies in the series. Also, Ichigo in his completely hollowfied form is also one of the strongest we've seen Ichigo.
