In the rebuilds all of her depth was removed. She is turned into a mere clone of yui, a playtoy for gendo and a love interest for shinji instead of being an actual person. The whole character arc she had in NGE is now void, since rei doesnt even have Liliths soul in rebuilds.
I hope i dont even need to explain to you how 3.0 completely finished her off (without even telling you to watch the movie, i only need to point out the sharp decline in her standings in the popularity polls after 3.0 was released).
Its similar to what they did to all characters except kaworu and asuka. misato, for example.

Nope. Rei I was a vengeful brat who was probably self aware that she was once Yui Ikari. Rei II was a reserved philosophical submissive. Rei III was a defiant tactician who used Gendo in much the way Yui manipulated everyone.
Rebuild Rei was a quiet girl slowly discovering her true emotions. Rei Q was a tied up ball of confusion. Also Rebuild sucks.

But the hardware of each Rei is different. Even though the same soul has the same intentions and emotions how that is expressed varies from Rei to Rei. Both Rei II and Rei III had strong feelings for Gendo because of their deep relationship but Rei II loved him and Rei III hated him. There was no character development shown for this. Rei II imagined seeing Gendo just before she died. Rei III knows everything that Gendo had done and how Rei II felt about him but her response was to feel used.

Yeah, like that. Scenes are added to spell out the hand motif that was only sorta there in the anime, and it's there when she rejects Gendo, but it's generally cute. The ghost, the presence in Unit 00, Lilith's black eyed leer, those are gone, the big reveal with the tank is there but made less spooky. I like her eldritch.
