It has to do with Japan's belief system. Since they don't belive in fate the way most Eurpoeans do, they believe a god that manipulates and sets the destiny of people is mostly evil. Also, in most of their fictions, demons are not the same as we usually think of demons in a religious sense. Most of the time demons in anime don't have anything to do with the concept of Hell. They're usually treated as a different race.
