Bleach hasn't been good in years and every new arc where Kubo had the chance to focus on his old strengths squandered that chance of improvement. I'd say the worst offenders on this list are Hisagi and Aizen.
Royal Guard gets away with transcending bankai -- it's almost implied by Kubo that their abilities are Bankai before the name 'bankai' existed. Their specific abilities are satisfying enough to fill the slot of bankai (i.e. sharpest sword, healing water, ability to steal names).
It'd be nice for the other characters to get adequate reveals if only because it'd be fair, but it's not plot-essential.
Hisagi, though, literally had pages, pages that could've contributed to anything else, that could've taken away from Bleach's godawful pacing, pages explicitly stating that he was going to train his Bankai. Those pages are now irrelevant.
Aizen, meanwhile, deserved a Bankai because he was a major villain, and him not revealing a Bankai shows that Kubo wrote himself into a corner and literally had to make Aizen retarded and not try to hypnotize Ichigo just to let Ichigo win.

So the King of Games arrived

I'd be more than happy to, anon. First let's consider the opening to the Final War arc. Kubo spends a chapter -- not just a normal chapter, but a PLUS sized chapter -- introducing two powerless new shinigami just so Ichigo can save their lives. These two characters, who get screentime, contribute absolutely nothing to the plot and only take up space. What vital role did these characters play in the arc? What thematic value did they supply? Will we even see them again in these last five chapters? They were a complete waste of page space.
After defeating wrestling quincy, Renji goes to take a nap. There's an extended sequence of NaNaNa (Quincy with the weird mouth) spying on him and triumphantly announcing that he's going to kill Renji because he got to analyze him for so long. The literal purpose of this scene is to build hype, tension, hint toward a greater conflict. Needless to say he and Renji never fight and he gets killed not in a real battle where he demonstrates his abilities, but as a sneak attack.
It's fine that Nanana died in a sneak attack. What's not fine is that we spent actual page space with this interaction hyping him up for nothing.
If you reread the arc, you'll see way more than that, mostly Quincies that are hyped up and then foddered off, but also sequences where Kubo has Quincies and Shinigami begin to fight, with page space wasted to hype up these battles, only for the fights to achieve nothing as consequence and buy time for something plot-related to happen.

Bleach managed to burn through my enthusiasm for it through Hueco Mundo, the Winter War and whatever they called the direct fight with Aizen(deicide).

They were great to me and they made sense, since the Quincies' relationship with Soul Society was hinted at ever since the Soul Society arc.
Kubo just wasted potential a lot with them, half the Vollstandigs weren't even revealed, half the Sternritter died to Juha's plot beam, if Bleach really is ending completely in 5 weeks (no Ultra Jump/Jump SQ sequel) then it's just a huge bag of wasted potential.

Sort of like Yu Yu Hakusho, Kubo wanted to move away from a dichotomy of power levels and start introducing quirky, creative abilities that could defeat someone with strategies that went beyond 'muh reiatsu.' This was evident since the start of the Fullbring Arc.
Unfortunately, it turns out Kubo is absolute shit at thinking up unique, non-sheer force related abilities, hence nonsense powers like making imagination real, copying anybody and all of their physical/spiritual strength, and the last three villains all being literally immortal, all of which create bullshit fights that are frustrating and not satisfying to read.
He should've just stuck with really big swords.
