Literally the only bad thing Kaleid Liner has done so far regarding canon is having Ilya's Quintet Fire beat Ea.
Even tracing Excalibur is not butchering the canon since the Kaleidosticks give them fucking unlimited Prana since they are basically a much better version of the Zeltrech Jeweled Sword. They are ridiculously overpowered artifacts. Besides, it's another universe and it's not like any of the characters act particularly off-character compared to the novels. Ilya is in fact the only one that changes considerably and that's justified since she got to grow with a normal family in this universe.

The answer is that people who don't like Sakura completely covered their ears and closed their eyes about the relationship between the two, and have spent years trying to rationalize their irrational hatred of something Shirou did even in UBW where he was ready to risk all, to save Taiga when Caster kidnapped her. So it stands to reason the other person he considers family might induce a similiar reaction, given that we spent a lot of time hearing from Shirou's own lips about how important Sakura and Taiga were to him. He even says flat out in a scene in Fate, that his house belongs to the three of them, and that they are his family.
Basically, they failed to understand Sakura, failed to understand Shirou, and lots of people project their own idea of who he is and ignore the rest.

Well HF also has its own seperate manga now, so that is another thing. Seems like it won't end up like the Fate route manga, but will be pure HF with extended other viewpoints, like Sakura not understanding this dream about the grail being constructed signifying she is a grail.
You can't really do much about HF being three movies. But it depends on how it's done. And UBW got another adaptation, if HF does well, they can do an anime for easy money.

If there ever be another anime for classic FSN, then won't be probably done by Ufotable. Is pretty much clear that current two adaptations (UBW TV, HF Movies) are pretty much definitive for them. And then they are likely to move on on other Fate or Type-Moon things. Next UFO will by most likely Hollow Ataraxia and then probably long-delayed Girls' Work.
