"God Ki" is basically powering up but keeping your Ki inside rather than letting it spill out.
Vegeta trained to do that. Goku pretty much took a shortcut since Beerus said that Goku's body somehow remembers how to tap into the god ki after going SSG
So basically SSG is the power you get from 5 other saiyans pouring their power into you, which possibly means that SSG is just the power of 6 saiyans in one.
SSB is something you can obtain through training, and is possibly weaker than SSG but still stronger than the other SSJ stages, and since it can be tapped into on your own, is more convenient than needing a ritual.
Goku being able to go SSG in the manga just seems strange, but maybe they're explain how later.

Only things that have happened in Super are Goku became a god while fighting Beerus, and then later realized how to combine god form with SSJ power, so it becomes stronger. So his current strongest form is Super Saiyan Blue.
However he still cannot beat Beerus, but Beerus is just another member of the cast at this point. Beerus and Whis are on record the strongest people in the universe. They come over for dinner and parties on occasion.
In order to keep making strong people, since they have directly stated that Beerus and Whis are the strongest in the universe, Dragonball started going into other universes recently. There was a tournament between universe 6 and universe 7. Universe 7 is where our heroes reside. Goku is outclassed lately by a lot of things, but he's having more fun than ever because of it. Dragon Ball Online's story was designed and written by AT. Towa and Mira were the main antagonists of that entire game. The Time Breakers were their own group of demons and other allies whose goal was to collect different warriors from different timelines to recruit them and put them to work in order to unseal the Demon Realm.
Demigra, however, is some OC guy the game devs thought up for Xenoverse 1, which is apparently the prequel in the sense that it happens before the villainous duo forms the Time Breakers. XV2 is about how to deal with Mira and Towa, who survived the attack at the end of the last game. All in all, we will see a lot of things like this from now on.

They had to collect a ton of energy to re-awaken Buu, their only target being Trunks. As long as he was able to overpower Dabura (which he did) it was a cakewalk from the beginning. I don't understand why the Buu saga happened at a different time in Trunks's timeline compared to the main one.
In the main timeline Buu saga happens when Trunks is 8 years old, yet for some reason happens when Trunks is in his 20's in the future timeline.
The Buu saga should have already happened when future Gohan and the androids where still around.

That's not what happened, they directly said he was stopping time in the manga. If you think it wasn't represented correctly you can complain about that, but that doesn't mean you're interpretation overrides canon.
Also he didn't win easily, even when he went all out he couldn't seal a victory at all, and admitted that Hit was still holding back. He said they could have a true fight later on, where Hit can use his assassin techniques.

Art direction of characters and setting.
Toyotaro stays true to Toriyama's style and looks authentic whereas the anime looks cheap in in-between frames. (It's better now)
The Kemetic (Ancient Egyptian) setting was also more esoteric and amusing than the food stands of the nameless planet of the u6 arc

I always figured Super Saiyan at this point is the base state, with Super Saiyan 2 adding fuel to the fire but you'll run out of fuel eventually. The consumption of Super Saiyan 3 is inconsistent to say the least.
Gotenks stayed at Super Saiyan 3 from the moment he powered up in and out of the Hyperbolic Time Chamber. Goku in the manga stayed at Super Saiyan 3 during the whole Kid Buu fight.
