It's been 15 years and I honestly can't think of any series that's even come close to it's quality. I'm just a huge fanboy though.

That's not a surprise considering how all the anime companies get outsourced and use CGI and whatever.
I didn't like CB as much as SC as a whole
However, I seriously cannot think of anything I've ever seen so perfectly animated as the final two episodes. I really can't think of anything that could have been done to improve them.

It's a shame how great most of the villains are in the one-off episodes, but how bland Vicious is.
And it honestly wouldn't bother me if Vincent wasn't a better Vicious than Vicious was. There's really only room for one massive edgelord in a series.
I really do like the parallels between Spike and Vincent though. Both men are haunted by their pasts and claim to live in dreams after being killed once before. Good shit.
It's still one of my top 10 after all these years. The soundtrack probably plays a big a part of that too

The show's narrative is constantly being fleshed out and the characters develop in some way in pretty much every episode. The show is not concerned with the things you asked about.

The atmosphere and the soundtrack of this anime is just beautiful. The interactions within those really imperfect, yet charismatic characters makes Cowboy Bebop a fantastic experience. I haven't seen anything that managed to pull off the feeling you get by watching it.
I know im late to the party, only stared watching Bebop last week. Only 10 episodes in, some episodes are pretty badass but other times im just bored.

It's completely different. SD is a comedy, where each episode is a standalone story, made by a different animation team and director. Some episodes are better than others.

Cowboy Bebop is one of the few shows where I can say there was an episode that bored me or didn't have me interested (except Boogie Woogie Feng Shui; it was meh).
As for tracks, I always get a lump in my throat during Space Lion and The Real Folk Blues. Kanno is a damn musical genius.

I just wanna add that the Cowboy Bebop OSTs delve into multiple subgenres of jazz, blues, latin, classical, heavy metal, funk, electronic, and whatever the fuck Cats on Mars is.

Well, at least in their own respective fields and how much /a/ likes them.
Regarding Toys in the Attic and each character's lesson:
Jet's is about being honest in your work and playing by the rules. You can't cheat yourself into a better life, you have to work for it. Which is inline with his character being so gung-ho and an ex-cop.
Faye's is about how you have to deceive to get ahead in life. The exact opposite of Jet. Everyone is out to get you, so trick them before they trick you. Makes sense with her backstory.
Spike's is my favorite. "Don't leave stuff in the fridge" which is just saying, take care of your problems before they come back to bite you in the ass. Basically the main theme of the show.
And Ed's "If you see a stranger, follow him"... I don't really get this one, but there is a lot about Ed that doesn't make sense so I guess it fits.
The only other series that rivals Bebop's overall quality is NGE.
NGE is more special personally, but Bebop is second by an inch.

the movie for Disappearance of Haruhi, the whole thing was beautifully animated and directed

Vincent's problems didn't really run deep enough for me to think of him as parallel to Spike. I never quite understood why he wanted to murder virtually everyone. I mean, I heard the explanation line that the movie gave, but it didn't seem "real" enough. I went through the film expecting to hear something darker about Vincent at any moment, but it never came. He was just a miserable ex-soldier. That's not to say he wasn't a good villain, but he simply didn't have enough hatred or adverse justification to make me feel that his plan made sense or that he would even come up with such a plan.
