Between Tsukihime and FSN, I think Tsukihime has more interesting characters while FSN has an overall better story. I think that it would be really tough to make an anime out of Tsukihime because the strongest psychological elements and character development are the focus of the "alternative" storyline, which would require significant rewriting to make those characters at all relevant to the "canon" storyline.
