There are very few acceptable shounen powerups and the ones I can think of is the Nen from Hunter x Hunter - which by far is one of the most genius ways of explaining power level by dividing it into 6 grioups and by making your Nen specialized in one area you'll be having difficulty in other parts.
But by far the best example of powerup that I can cite is from Kamen Rider Blade, its not anime, but the card acquisition and progression system is amazing and showed how each Rider grew his power

He's definitely less special than Maka+Soul, and less special than Kid, but his partner is also part of a ninja family almost as famous as his own and she's far more competent than Liz and Patty.
It basically comes down to ambition + partner advantage. It doesn't invalidate him being the underdog who achieved godhood, but he's no more impressive than say, Chocolove who ended up the strongest out of the 5 Shaman Rangers despite the MC being the literal twin of the strongest being in the series.
I mean in the end, let's face it, the difference between Excalibur and everyone else is the same as Hao and everyone else in Shaman King. The only difference was that Excalibur wasn't the villain. Okay he wasn't the active villain. After all even Asura would have killed himself if he tried to mess with Excalibur.
Kid also didn't really have any ambition to rule with an iron fist unlike his dad. He never minded not being the strongest. The series increasingly started to focus more and more on the plot,philosophy and it's various twists and started to downplay the battle aspect of the series
He also said that Shaman King later on lost it's originality with the usage of common Shonen tropes(maybe WSJ forced him to make it more cliche) which I agree with

After the first 100 chapters or so the art really goes through a noticeable decline...you can see how how generic and stale it becomes after that and it continues to decline more and more 'till the end(so did the plot/writing on the middle of the manga but that's another story)

Its not a rejection of being more skillful, its accepting that it makes more sense to put your efforts toward making things work better logistically for your strong guy. The in context power up is the MC becoming better at creating a more advantageous battlefield for the ace fighter to wreck shit, instead of just trying to become stronger than every one else in a short amount of time.
