What would have happened if they reached the sub?
They'd be in a group of adults, and loose all of their independence. They tried that once before at Saya's house and none of them could stand it. They realized that they changed as the world changed, and they wanted to be on their own.
So what happens after that? They reach the sub, are saved, and life daily life free from zombies? Shit ending. They reach the sub, but an infected managed to get on board, and everything goes to shit yet again? That isn't a conclusion at all, its just another predictable arc that leaves them in the same spot they were in before. Say they never make it to the sub on time. They're just going to be stuck in the same area trying to survive, never accomplishing anything more than short term goals.
The whole zombie genre in general sucks. You either deal with the drama of constant near death experiences, which gets stale, or you have a boring sappy ending. The author knows this as well so it was left on the perfect cliff hanger.

Saeko liking the MC from the very beginning and being overtly assertive make her a very plain and unidimensional character in my eyes, and her archetype.
On the other hand I would have loved to see Rei slowly swallowing up her hostility and becoming more dere, but that's just me.
Also, when I first read the series years ago, I wasn't familiar with the harem archetype in manga and anime, and since I was rooting for Rei, seeing Saeko getting closer to him gave me some NTR vibes.
Same goes for Saya seemingly falling for the MC, instead of strengthening her relationship with the fatty.

When Highschool of the Dead is being subtle, you take notice. And the shrin scene in the anime was as subtle as the series gets. So yeah, they probably most likely fucked.
