As someone who studied culinary, a lot of the theories and methods are sound. Some though are so over-the-top and fantasized due to the extreme precision the cooking methods the characters need to make their dishes for the sake of the manga and plot. That said, it's all based on actual cooking methods. They're just romanticized and dramatic to match the mood of a battle shounen.

And that's the thing, a lot of the cooking stuff in the manga are simplified. I believe a lot are more complex than that (like the gastronomy shit of Alice)
